Expect a medium body, bright acidity and a long, balanced finish. We roast it light so the sweetness and florals stay clear.\u003c\/p\u003e\u003ch3\u003eWhere the name comes from\u003c\/h3\u003e\u003cp\u003eWe named this coffee after the Rota do Lagarto, the lizard route, a hiking trail in Pedra Azul State Park near Sitio dos Cedros, that leads to a rock formation shaped like a lizard.\u003c\/p\u003e\u003ch3\u003eFive generations in Espírito Santo\u003c\/h3\u003e\u003cp\u003eThe Brioschi family descends from Italian immigrants and has grown coffee for five generations. Sítio dos Cedros is part of the larger Fazenda Tapera, divided through inheritance and now overseen by Dério. He studied food science and technology at the Federal Institute of Espírito Santo, focusing on coffee processing, and interned at Coffee Lab International.\u003c\/p\u003e\u003cp\u003eThe family and their agricultural partners pick the coffee by hand. A mild climate and rich soil let the cherries ripen slowly from May to December, and the family is developing an agroforestry system to reduce its environmental impact.
