Fazenda Sertão is home to one of Brazil's most precious coffee treasures: Red Bourbon trees that have been producing exceptional cherries for over 100 years. These ancient trees, carefully preserved by the Pereira family, represent a living connection to Brazil's coffee heritage and produce beans of extraordinary complexity and character.

The Bourbon variety was introduced to Brazil around 1860, and from there rapidly spread north into other parts of South and Central America.
The term Reserva means that this coffee comes from a specially selected lot; a reserve of the finest beans from the oldest, most prized trees on the estate. Just as a wine reserve represents the best of a vintage, the Reserva designation honors the exceptional quality and limited availability of coffee from these centennial trees. It's a mark of distinction, reserved only for lots that demonstrate outstanding cup quality and unique terroir expression.

Brewing Espresso & Filter: Recipes for the Perfect Cup
We have divided our coffees into two roasting categories: espresso and filter. The espresso roast is medium to dark, while the filter roast is medium to light - depending on the specific coffee profile. This classification is for convenience only, as you can brew an espresso roast using a filter or pour-over method, and vice versa.
To fully enjoy the flavors and aromas of our coffees, water temperature plays a crucial role. We recommend using the following guidelines:
For pour-over:
•Water temperature: 93-95°C (200-203°F)
•Brew ratio: 1:15 to 1:18 (1 gram of coffee to 15/18 grams of water)
•Grind size: medium-fine to coarse, depending on your brewing method
For espresso extraction:
•Water temperature: 89-91°C (192-196°F)
•Brew ratio: 1:2 to 1:2.5
•Extraction time: 28-33 seconds for a double shot using 20 grams of fine ground coffee
*Please keep in mind that all ratios are 1 gram of coffee to 'x' grams of water.

About the farm
The history of Fazenda Sertão merges itself with the first steps of coffee growing in Carmo de Minas. From the first generation of coffee growers in the region, José Isidro Pereira learned very soon in his life that living is all about being responsible and joyful at the same time. José Isidro lost his father when he was only 1 year old and was raised by his loving and dedicated mother, who made him an honorable man. José Isidro grew up, then, and studied dentistry – occupation that he practiced for a couple of years during his early manhood.
The destinies called him back to Carmo de Minas when his mother died and he was the only heir of a piece of land that, of course, is actually Fazenda Sertão. Years later then, in 1949 José Isidro married the love of his life, Nazareth, and found in her a real partner for the lifetime – and even further. Jose Isidro once said that all the inspiration for the business came from his father, even without knowing him for a long time. Years later came his own children: Francisco, Luiz Paulo, Glycia and Sandra.
Fazenda Sertão is located above 1.100 m, in Carmo de Minas – state of Minas Gerais. It has an average annual temperature of 18ºC. Crops are planted on the top of hillsides with slopes of up to 50%. That’s an important measure to avoid frosts, common in the region on winter, affecting the health of the trees and to provide a more uniform ripening as well as protection against fungi infections because of the lower relative humidity. All these steps, in the end, result in achieving better final quality on the beans.
