Description

Explore Filter Special Box: Five Brazilian Microlots

Five farms, four regions of Minas Gerais and five very different cups. This box puts our filter coffees side by side, so you can taste how much variety, process and place change what ends up in your cup. It runs from dark berries and tamarind to brown rum and roasted almond.

What's in the box

  • Maragogipe Southern Boundaries: blackcurrant, jabuticaba, tamarind. Natural Maragogipe from Fazenda Santa Mônica, Cássia, Alta Mogiana. 250 g
  • Fazenda Sertão 100 Years Reserva: red fruit, sweet and full-bodied, spicy. Natural Red Bourbon from Carmo de Minas, Serra da Mantiqueira. 250 g
  • Funky Jumper Banger: fruity, brown rum, boozy. Semi-anaerobic Red Catuaí from Fazenda do Salto, Carmo da Cachoeira, Sul de Minas. 250 g
  • Sítio Matuto: caramel, apricot, herbal. Natural Yellow Catuaí from Campestre, Sul de Minas. 250 g
  • Nossa Senhora de Fátima: dark chocolate, brown sugar, roasted almonds. Natural Catuaí from Vargem Bonita, Serra da Canastra. 250 g

Brew them one at a time with the same recipe and grind, so the differences come from the coffee itself. Every bag is bought direct from the farm and roasted in small batches in Amsterdam.

Best brewed as: Filter (V60, Chemex, AeroPress) · water 92 to 93°C · ratio 1:15 to 1:16

Frequently asked questions

Good to know

What's in the Explore Filter Special Box?

Five single origin microlots of 250 g each: Maragogipe Southern Boundaries, Fazenda Sertão 100 Years Reserva, Funky Jumper Banger, Sítio Matuto and Nossa Senhora de Fátima. That's 1.25 kg of coffee in total.

What do the coffees taste like?

They range widely. Maragogipe brings blackcurrant, jabuticaba and tamarind, Fazenda Sertão red fruit and spice, Funky Jumper Banger brown rum and a boozy sweetness, Sítio Matuto caramel and apricot, and Nossa Senhora de Fátima dark chocolate, brown sugar and roasted almonds.

Which brew methods suit this box?

All five are roasted for filter, so they work well in a V60, Chemex, AeroPress or other pour-over. A good starting point is 1 g of coffee to 15 or 16 g of water at 92 to 93°C. Brew each coffee with the same recipe so you can compare them fairly.

Where do the coffees come from?

All five come from farms in Minas Gerais, Brazil, spread over Alta Mogiana, Serra da Mantiqueira, Sul de Minas and Serra da Canastra. Tiago, our founder, was born in Brazil and buys directly from the farmers.

How fresh is the coffee and how should I store it?

We roast every week in Amsterdam. Keep each bag closed and airtight in a cool, dark place, not in the fridge. Open one coffee at a time and grind just before brewing for the most aroma.
