Description

Honey processed Catucaí 785 from the Brioschi family

Rota do Lagarto is a small lot from Sítio dos Cedros, the main property of Dério Brioschi and his family near Venda Nova do Imigrante, in the mountains of Espírito Santo. It is a Catucaí 785, grown in the shade at 950 to 1100 m and honey processed.

What you taste

Sweet and creamy, with caramel, vanilla and butter cookie, lifted by a floral touch of jasmine. Expect a medium body, bright acidity and a long, balanced finish. We roast it light so the sweetness and florals stay clear.

Where the name comes from

We named this coffee after the Rota do Lagarto, the lizard route, a hiking trail in Pedra Azul State Park near Sitio dos Cedros, that leads to a rock formation shaped like a lizard.

Five generations in Espírito Santo

The Brioschi family descends from Italian immigrants and has grown coffee for five generations. Sítio dos Cedros is part of the larger Fazenda Tapera, divided through inheritance and now overseen by Dério. He studied food science and technology at the Federal Institute of Espírito Santo, focusing on coffee processing, and interned at Coffee Lab International.

The family and their agricultural partners pick the coffee by hand. A mild climate and rich soil let the cherries ripen slowly from May to December, and the family is developing an agroforestry system to reduce its environmental impact. Their work was recognised with the Venda Nova do Imigrante Quality Contest in 2014 and the BSCA Prêmio Destaque in 2017.

Explained

Behind this coffee

  • Small batch

    What is a microlot?

A microlot is a small lot of coffee from one farm that is picked and processed separately. That keeps its own character intact and makes it traceable to the farm.

Because the quantity is limited, a microlot is only available for a short time.

  • The process

    What does honey process mean?

With the honey process, the skin of the ripe coffee cherry is removed, but the sticky fruit layer around the bean, the mucilage, stays on while the coffee dries. That sticky layer gives the method its name: there is no honey in the coffee.

It sits between a washed and a natural coffee. The sugars in the mucilage give the bean extra sweetness and a rounder body, with cleaner fruit than a natural.

Frequently asked questions

Good to know

What does Rota do Lagarto taste like?

It is sweet and creamy, with caramel, vanilla and butter cookie, and a floral hint of jasmine. The acidity is bright and the finish long and balanced.

How should I brew it?

It shows its sweetness and florals best as filter coffee, for example with a V60, Chemex or AeroPress. It also works as a bright, sweet espresso.

Where does this coffee come from, and why the name?

From Sítio dos Cedros near Venda Nova do Imigrante, in the mountains of Espírito Santo, Brazil. Dério Brioschi and his family grow it at 950 to 1100 m. We named it after Rota do Lagarto, a hiking trail in the park of Pedra Azul that leads to a rock formation shaped like a lizard.

How light is the roast, and what does honey processed mean?

We roast it light, 2 on a scale of 5, with a mild strength of 3 out of 10. Honey processed means the cherry skin is removed but part of the sticky fruit layer stays on the bean while it dries, which adds sweetness and a creamy body.

How fresh is the coffee when it arrives?

Orders leave within 1 to 2 working days. By then the coffee was roasted 2 to 12 days earlier, and the roast date is on the bag. Coffee needs about a week of rest after roasting and is at its best up to around six weeks.
